1. Broccoli paté

This preparation is suitable to be served as an appetizer, perhaps accompanied by other dry ingredients, such as crackers or croutons, or with seafood.

Ingredients

  • 120 g of broccoli
  • 250 ml of water
  • 45 ml of red wine
  • 15 g of salt
  • 15 ml of extra virgin olive oil
  • 50 g of onion
  • 15 of pepper
  • 1 egg
  • 8 g of cumin
  • 15 ml of milk

Preparation

  • The first thing to do is to cook the broccoli without the stem over medium heat in a saucepan with enough water to soften them. The cooking time is generally 5 minutes.
  • Drain the broccoli and pass it under cold water to stop cooking.
  • Transfer them to the blender, add the onion, wine, olive oil and blend until creamy.
  • Add the salt, pepper, cumin, egg (to give consistency) and milk. Blend again.
  • Finally, serve your pate in a cup with some wholemeal bread.

2. Vegan pate based on cucumber

Cucumber is a food rich in dietary fiber, vitamins (A, B, C and E) and essential minerals (such as potassium, iron and phosphorus).

Ingredients

  • 200 g of cucumbers
  • 15 g of cornstarch
  • 30 ml of vinegar
  • 15 g of salt
  • 2 cloves of garlic
  • 60 ml of white wine
  • 50 g of onion
  • 2 sweet green chillies
  • 15 g of pepper
  • 15 ml of extra virgin olive oil

Preparation

  • First, wash and cut the cucumbers into small pieces.
  • Then chop the onion, chillies and garlic and fry them with a little olive oil.
  • Transfer the sautéed, cucumbers and wine to the blender and turn it on at medium speed.
  • Add the cornstarch, salt, pepper and vinegar and blend on medium speed until creamy.
  • Finally, serve the cucumber cream in a cup with dry ingredients or seafood.

3. Eggplant paté

  • 2 cloves of garlic
  • 15 g of chopped parsley
  • 15 ml of lemon juice
  • 45 g of Greek yogurt
  • 15 g of salt

Preparation

  • Wash and cut the aubergine into small pieces and put it in the blender.
  • Add the lemon juice and Greek yogurt. Blend on medium speed.
  • Then, add the garlic, parsley and salt. Blend again to obtain a thick consistency paste.
  • Serve your paté in a cup and accompany it with carrot sticks and celery.
